I was just telling the hubby the other day, about how I wish I was more creative in the kitchen. You know, "throwing stuff together" with leftovers and all.

And yesterday, it just happened! We're leaving for San Fran on Wednesday, and I'm trying to clean out the fridge. We had a red, orange, and yellow pepper, some cherry tomatoes, an English cucumber, and a few other things. So, I opened up a can of chick-peas, chopped up all the veggies, and made some lemon-tahini sauce (a la Megan) - and voila! A tri-pepper and chick-pea salad for lunch today. I know that doesn't make me a chef or anything (NOT by any standards), but I was proud of myself for throwing something healthy together.

The dinner on Saturday turned out really well (sorry, forgot to take pictures of my creations! Next time!). There wasn't even much left over, so hopefully that was a good sign. The coriander-basted potatoes were DELICIOUS. And relatively healthy, too. I used some coriander, red onion, lemon juice, garam masala, and salt as the sauce. I then coated the baby potatoes in the mixture (the potatoes were boiled), threw it all in a skillet with a couple of tablespoons of oil, and it all roasted together.

Now, I'm taking a mini-break from cooking. Well, sort of! I'm making home-made pizza on a spelt crust tonight. Low fat cheese, fresh tomato sauce, roasted garlic, and veggie pepperoni. I usually only have two small slices and a nice salad on the side.

I'm worried about my eating during the San Fran visit this week. Especially with places like this around! Well, I plan on walking around a lot, and eating very healthy at all the restaurants we go to. I will indulge in a few things here and there, but will be making a conscious effort for the most part.

And I'm very much trying to talk myself out of going to the gym tonight. It's sweltering here, and I'm feeling very lethargic. I don't even think a walk would be an option (even after the sun goes down), because it's so disgustingly hot. I dragged my gym bag all the way to work, so I figure I'd better make use of it. But I really don't want to go. Sorry for being whiney - the heat does that to me sometimes.

I'm DYING for a peanut-butter cup right now. Like, dying. I'm trying to desperately guzzle water in an effort to forget about it, but the thought of smooth peanut butter inside that oh-so-sweet chocolate cup is making me crazy right now.

Other than that, I'm doing well. Diet has been decent - except that I had some of my hubby's delicious low-fat mash potato yesterday. Could have done without, but oh well.

The heat is making me ramble. Sorry!

The heat is terrible but beneficial at times: usually my water increase doubles!
Here it is so hot I cannot use my laptop for long: after 30 or so minutes the fan has to work so hard I am scared the computer will break donw!
Super well done on the weekend of eating: you see? Your will and overall habits are improving every day! There will be the time you will not even think you may overeat on the weekend special occasion!

Do not worry about San Fran: no matter what, despite the heat, you will be walking around a lot more than usual and engage yourself in activities so some extra calories to compensate for that are allowed!
Have a great one: and don't forget the camera this time! Food porn is always very welcomed!

Isn't it funny how life's little impromptu victories (like your salad) can be such great pleasures? You don't know why at the time, but for some reason they tickle the heck out of you. Good for you!

Mmmm - that's a yummy sounding lunch. I think that makes you rather chef like.

Have fun in San Fran! Don't worry too much about the food, just try and be reasonable about what you eat. Really when you're away the best one can hope for is to just maintain!

Good for you on whipping something up like that. I'm fairly useless unless I have a detailed recipe. I'm on the hunt for a great site or book with healthy recipes in fact.

Your impromptu salad sounds fabulous! You'll have so much fun in SF and like everyone says you'll do loads of walking and just think of all the fresh fruit and such.
