An ode to dad's everywhere....

Happy Father's Day to all of you dads out there!


This is the first Father's day we're celebrating in our family. It's a gorgeous day for such a wonderful occasion.


I decided to make homemade pancakes for hubby today. My lovely daughter was supposed to help me, but she opted to nap instead.;-) I was a bit apprehensive, because I'd never made pancakes from scratch before. Plus, I've never needed to because of a lovely vegetarian restaurant practically next door that makes the most yummy one's. However, I was in the mood to experiment!

I made the Banana Pecan pancakes from "Vegan with Vengeance", with a handful of dark chocolate chips thrown in, to boot. I served it up with some fresh organic maple syrup...yummy!

The best part about these pancakes, is that they were surprisingly healthy! I used whole-wheat flour, and the batter only called for 1tbsp of oil (I opted for olive). And while cooking them up, I used a little "sprayer" for my oil, so I was very careful.

I couldn't believe how filling they were - I wasn't hungry for HOURS. Hubby loved them! And the baby enjoyed watching us eating them. Soon, she'll be able to enjoy some too.;-)

Time for a new challenge, right? I signed up for a stroller-fit class which is also known as baby bootcamp. It starts this Thursday.

What have I gotten myself into? My friend tells me that it's a CRAZY workout. Apparently, it's not just a "walk in the park". We run through the park with our strollers. We stop every few minutes to do push-ups, lunges, squats. We leave our strollers at the base of these concrete stairs (4 stories), and run up and down them several times.

Plus, it's a 30 minute walk to and from the park for me. That's a TWO hour workout, people. Am I mad? My friend told me she could barely walk after the last one.

I'm just concerned about the heat - but hopefully we'll be okay. Lots of sunblock and a hat will be worn....I'm psyching myself up for it right now.

Oh my god - that's awesome! I wish I could join with you - that's right up my alley. I can't wait to read your post about after your first 'training'. Exciting - GOOD FOR YOU!!!!

holy cow!! that workout would kill me!! drink LOTS of water... make sure to bring extras too. good luck!

Your pancakes sound devine, trust you to add chocolate! ha ha ha. And that Stroller Class sounds awesome mate, go for it!!!! My only concern would be leaving the babies at the bottom of the stairs unattended, make sure someone stays with them mate.

YAY! That's my kinda workout! I bet you'll feel so awesome when it's done! I wish we had something like that around here...

Chris - The instructor watches the babies at the bottom of the steps - I would never leave the babe unattended.;-) And yes, trust me to throw some chocolate-chips in the pancakes, even after I supposedly broke up with chocolate.;-)

That workout sounds FUN! You can do it. No matter how hard it seems the first time, just remember that it'll keep getting easier :-)

Hey, what a fun Father's Day. Good for you with the pancakes. They sound like they were AWEsome. Way to throw in some chocolate chips, too. That must've been fun.

Your stroller workout sounds like a blast!! i can't wait to hear about it when you start doin' it. Wow, i love it. i think there's something like that out here in San Diego, too... it's a great idea!

Ohhhh baby bootcamp sounds awesome! Think I could borrow someones baby to take the class? heehee.

And see how easy it is to make your own pancakes from scratch? Don't you just feel so accomplished now?! LOL That kind of cooking is so addicting to me.
