Holding Steady!

I never really knew what that expression, "There aren't enough hours in the day!" meant until now. I can't believe the week is over - it's been crazy-busy on my end.

I did weigh in last Saturday, and my loss held steady! I think that the doctor's scale was very generous, and while I'd like to think that I lost a couple of extra pounds, I'll save it for a rainy day when I have a tiny loss and to add a little a somethin' somethin' to it.;-)

Food has been great - I've been trying all sorts of new recipes, like:

- lentil barley stew
- a new scrambled tofu recipe
- spaghetti squash*

Next week, I'm going to try a black-bean burrito recipe that a friend gave me. I'm really enjoying experimenting with new recipes - I'd forgotten how much I love cooking. I've also taken a steady interest in this, because the baby will soon be eating what I eat - and I want it to be very healthy.

I still stink at exercise, and finding time to do it. I have every good intention of getting it - but by the end of the day, I'm just too exhausted. So, in a valiant effort to change this, I thought I'd go in the morning today. I packed all my stuff last night, made the baby's bottle in advance, and went to bed at a reasonable hour. Well, doesn't hubby forget to set the alarm? Grrrrr.

So, my goal for this week is to shake my booty doing something three times. It could be an hour-long walk. Or running up and down the stairs of my apartment building, for all I care. Three times is totally reasonable, and I should be able to do it.

Besides my new perspective on health and life, the one thing that's really motivating me? My saggy-pregnant-belly-sack. It is SO yucky. One can only hide it with clothes for so long. I want to be tone, trim, and strong.:-)

*I had a bad experience with the spaghetti squash. It was my first time. I cut it in half (length-wise), and covered it tin foil. I also punctured a few (like maybe five or six) holes through the skin, and baked for about 80-minutes. When I ran the fork through it to release the "strands", they were still crunchy. I'm guessing that means it was undercooked - but what did I do wrong?

Steady is good. If you can't get to the gym, why not take baby and go for a nice walk? Its might not feel like much but its something. Good luck with the recipes. Have a nice weekend.

I cook my spaghetti squash in the microwave. 1 tbsp water, garlic, cover it with cling wrap and cook it for 10 - 15 minutes, depending on how big. Easy peasy and super tasty....Perhaps give that a try?

You sound like you are doing so well! And the baby belly sack, you aren't alone my friend. And honestly, I'm not sure mine will ever go away. Just gotta find ways to hide it :) But after all the exercise, it's at least getting smaller (but still hanging, ick)

I take the whole spaghetti squash, put a few holes in it with a knife and then nuke the whole thing for about 12min, turning it 1/4 turn every 4 minutes. It's then soft and I cut it in half, scoop out the seeds and the use a fork to get the strands out. Works every time.

Steady is what wins the race my friend.

Yay! Making a loss "stick" for a while IS progress! Now, onto the booty shaking! I was trying to make doing the dishes more fun last night and cranked up the stereo and danced around in the kitchen for a while. Shake it!!!

Yeah for holding steady!

I cut my squahs lenght-wise, take the seeds out, put it cut side down in a glass pan and in the oven at 350 for about 40 minutes or until it comes out in strands when I put a fork in it. Easy!

I gained a little but like you I had another loss at the dr office.
So I am not doing poorly if I don't lose again by tuesday I will lower my calories by 25 or 50.

I made the same mistake you did with spaghetti squash, and people told me I had OVERcooked it and dried it out.

I'm so interested in the lentil barley stew! Would you mind posting the recipe or emailing it to me (jeannie.waters[at]hotmail)? I have both barley and lentils sitting at home and don't know what to do with them!!!

Keep up the great work!
