Unbelievable chili!

Thanks to all of your for your encouragement on my sizable loss! It was exactly what I needed to get that motivation going, you know?

My eating has been great - I'm still not well enough to exercise, though.:-( My coughing is still insane - the point where I'm practically wheezing. Though I think tonight, I should at least attempt a little walk - even if it's leisurely. I love walking in the Fall, with my iPod - it's very calming and therapeutic.

Well, it's getting a little bit blustery out there. Hubby came home, and suggested that we get take-out - and truthfully, I was feeling wiped out and wearily agreed. But then, I thought about all the extra calories (and the fridge full of groceries that need to be used!), and changed my mind. I was starving, and wanted something hearty, and rib-sticking.;-) Since I made the "un-chicken" salad from the Teany book earlier this week, I thought I'd leaf through it again for a good recipe.

I came across a chili recipe, and I had almost all the ingredients. In fact, the seller for me, was that it boasted: "Make this recipe at least once before inviting friends over, because it's so damn good you may not want to share!". I've had a lot of chili in my time - some pretty decent, some of it just okay. So naturally, I was a bit dubious - I mean, how good can chili really be?

Well, it was beyond worthy of the hype. Chock-full of vegetables, beans, and incredible spices. I have never eaten such incredible chili! There were a few key ingredients like toasted cashews, espresso, and even dutch cocoa! We ate it piping hot, with a dollop of light sour cream on top. Fabulous, healthy, and soooooo satisfying. I can't wait to eat it for lunch today!

My goal today is to be better with my water intake - so I'm off to drink up! Hope that reminded you to do the same.:-)

That's awesome! I don't think I congratulated you on your loss - but that's fantastic, way to go !!!

The chili sounds awesome - the fact that you had those ingredients at home is amazing in itself (who has espresso and toasted cashews?)

drink some tea with lots of honey and lemon. it always makes me feel so much better. and you know, a little exercise does help boost your immune system. nothing heavy, where you'll get worn out. but a brisk walk would be perfect!

MMMMM nothing better than comfort food on a cold night. Congrats on making the effort to cook when you're not feeling up to par. Get well soon. Keep warm!
