First day back....

First of all, thanks for all of your condolences. I don't know what to say - the whole event has caused me to re-evaluate my own life, health, and habits. It's so easy to say, "I won't take things for granted", but in time, I will again. I'm trying to figure out how to live a life that is about today and not "one day".

So, my last week wasn't horrible despite all of the stuff I had going on. It also wasn't great. Still, I managed to maintain my weight which is more than I could ask for, I suppose.

I'm back in action today - and I'd like to actually start my 30-day challenge! What happened lat week is proof that life is not going to stop while I pursue my weight loss efforts. I just need to figure out how to do my best with the curve-balls, instead of hurling myself off the wagon! Needless to say, I couldn't think about my flax oil and vitamin supplements last week. Nor could I think about trying out the new yoga class at the gym. I'm not making excuses - I just didn't have the head space. So, I'm back at it again. With a vengeance.

Over Christmas, I bought myself "Veganomicon", the most amazing cookbook in the world! I have always been a bit wary of my cooking abilities, but this book makes me want to spend the rest of my life in the kitchen. I've tried three recipes so far, all of which are hits:

- Lemony Roasted Potatoes
- Chickpea cutlets (I served them up with mushroom gravy and the above potatoes, along with steamed asparagus - yummmmy!)
- Vanilla Pound Cake (Ahem, in case you're wondering, a piece or two of this marvelous cake might have found it's way into my mouth. I swear, those pieces were after me - not the other way around!).

I can't wait to make more! I have my eye on a pineapple-cashew-quinoa stirfry. Sorry, no pictures. There was some mass-devouring of the food before I remembered. Next time, I promise!

Usually, Friday nights are take-out for me and hubby. It was nice to actually make a nice meal in the kitchen - we opted for the cutlets that evening, and it was a satisfying but healthy meal. I hope to try a new recipe each week.

I also tried a little something new on the weekend. I always wake up starving. I'm just one of those people who gets hungry in the morning. Instead of scrounging through random cupboards, or making peanut-butter and toast again, I decided to make a smoothie. Vanilla soymilk, 1/2 a banana, some frozen berries, and some whey protein powder. I hand-blended that sucker for about 40-seconds, and voila - a marvelous and healthy breakfast. It gave me a ton of energy to run around and do my Saturay morning stuff. It took no time, and it was delicious. I've been doing it every morning since Saturday, and it's made a big difference.

I'm a bit cold-ridden (my immunity sucks!) - but I'm taking some ginseng supplements and I hope to beat it. Right now, though, I feel like crap. Still planning on going to the gym tonight - even if it's for 30-minutes. I'm such an overachiever sometimes. It's like, if I can't go to the gym for 90 minutes, then why bother? My challenge calls for 30-minutes, and that's plenty. Marathon, not sprint - need to keep reminding myself.

Well, I need to go and do some meal planning for the rest of the day. Wish me luck on my first day!

Glad you're back! And also so sorry about your loss, hang in there.

On a side note -- would you be able to send me the pineapple cashew quinoa recipe? (jeannie.waters at hotmail) I really need some quinoa recipes and that sounds AMAZING!

Funny enough (although not at all surprising) I had the same thoughts as you regarding the gym. I think that if I can' tmake it 5 times a week, then why bother? But I'm starting again, and I figure 1 day a week is better then none. Welcome back, you've been missed.

Glad you're back. sorry to hear about your loss. What a tragedy. Your family is in my thoughts and prayers.

I'm checking in on you everyday so you better get your butt to the gym today. It just started storming here and we are supposed to get 30 cms of snow today but I'm still going to the gym after work (mostly because my hubby has to work until 5:30 amd I'm off at 4:30 but I could kill the time just sitting at my desk reading blogs right?!) I'm going to the Body Sculpt class (as long as it's not cancelled by the storm)

We can do this. We just need to keep encouraging each other and taking it one day at a time. This is Day 1 for me. It's almost like we are going to an AA meeting. "My name is Carolyn, I'm a foodaholic and I've been clean for XX days" haha Too bad I can only say about 3/4 of a day so far but it will add up and I'll (We'll!!) feel fantastic!

I'm really sorry to hear about your cousin. So sad. Sounds like she had a profound impact on your family...I'm sure you'll keep her memory alive.

sorry to hear about your loss... weird how things like this make you reevaluate your life and see it much differently... i try and make the most of everyday but sometimes even that is hard... we just have to do our best, regardless of what's going on around us, because life isn't going to stop just because we are...

Hello - I just discovered your blog and am enjoying it very much! I am not sure if you are vegan or just vegetarian, but I wanted to let you know that whey protein is in fact made from cow's milk. Anyway, sorry if you already knew that. Keep up the healthy living!
